Mash 1 ripe banana in a bowl until smooth. Add 1 egg (or 1 flax egg for vegan), 100ml of oat milk, and 1 teaspoon of vanilla extract. Mix well. Add 80g of oat flour, 1 tablespoon of Iswari Organic Maca Powder, 1 teaspoon of baking powder, and a pinch of salt. Stir until just combined — a few lumps are fine, don't overmix.
Step 2/3
Heat a non-stick pan over medium heat and add a small knob of coconut oil or butter. Pour approximately 2 tablespoons of batter per pancake. Cook for 2 minutes until bubbles form on the surface, then flip and cook for 1 more minute. Repeat with remaining batter.
Step 3/3
Stack the pancakes and top with sliced banana, a drizzle of raw honey or maple syrup, and a light dusting of maca powder. Serve immediately.
